Mitsukan’s (Mizkan) Ajipon is the leading ponzu soy sauce in Japan. Ponzu soy sauce (shouyu) is also often referred to as just Ponzu (which is also the name of a Japanese citrus based vinegar without soy sauce), it is a traditional Japanese sauce made with citrus fruit. The sauce is thin and watery and has a tangy taste to it. Ponzu is low in sodium and can be used as a substitute for soy sauce. You can use the sauce as seasoning, but also as a dipping sauce. It pairs well with seafood, dim sum and meat.
