<p>Welkom  bij het testverslag van het allerleerste sessie van het testpanel <a href="http://www.dunyong.com" target="_blank">Dun Yong</a> en <a href="http://tokowijzer.nl">Tokowijzer</a>!</p>
<p><strong>Wat hebben we getest?</strong><br />
We begonnen het eerste testpanel met een elementair ingredient in veel Aziatische keukens: Chinese tarwenoedels. Noedels, noodles, eiernoedels, mie, bami, Chinese mie: er zijn zoveel verschillende soorten! Ze liggen in het schap in allerlei verpakkingen, de ene noedelsoort zit gevormd in kleine nestjes, de andere soort heeft mooie krullen- de ene noedel is heel dun en sprieterig, de andere soort rond, breed of vierkant, grauw of juist knalgeel: hoe moet je nou weten welke soort je moet kopen?</p>
<p>Omdat Tokowijzer dat ook wel wilde weten, organiseerden wij samen met <a href="http://www.dunyong.com" target="_blank">toko Dun Yong</a> in Amsterdam een proefsessie van ons <a href="http://www.dunyong.com/tpaddme" target="_blank">testpanel Dun Yong-Tokowijzer</a>!<span id="more-9550"></span></p>
<p>Van het driekoppige vaste panel konden deze vakantietijd twee personen naar Amsterdam komen, en er waren drie losse testers aanwezig die uit de aanmeldingen via de website van Dun Yong waren gekozen. Als invaller voor Fong (van de Flavors of the Far East kookstudio) was Miya gekomen. Maar de sterren van de avond waren natuurlijk onze tarwenoedels. Laten we ze even voorstellen:</p>

<p>De geteste noedels, van links naar rechts: 1. Pearl River Bridge; 2. Mi Chay; 3. Cap Atoom Bulan; 4. Cock Brand; 5. Sau Tao; 6. Golden Lion; 7. Shin Hua; 8. SunWave.</p>
<p>Om het zo eerlijk mogelijk te houden waren de verpakkingen weggehaald en werden de noedels alleen met een nummer aangeduid. De noedels werden door het testpanel op drie manieren geproefd: neutraal, in een soep en gebakken in de wok. Bestektechnisch en wat pannen betreft waren acht verschillende merken een hele uitdaging, maar uiteindelijk zaten <a href="http://www.klarykoopmans.com" target="_blank">Klary</a>, <a href="http://www.asiagastronomica.com" target="_blank">Benno</a>, Peter, <a href="http://twitter.com/webtic" target="_blank">Paul</a> en <a href="http://twitter.com/kattebelletje" target="_blank">Alice</a> met in de ene hand eetstokjes en in de andere hand blaadjes met proefnotities ijverig te proeven en te schrijven. </p>
<p>Natuurlijk kon dit niet zonder dat er in de kookstudio onafgebroken werd gekookt door chef Miya. Ze was geweldig! De noedelsoep was een Japans geinspireerde kippenbouillon, op smaak gebracht door gember, lenteui, sojasaus en miso. De saus die ze in de roerbak gebruikte was meer Korean style met teriyakisaus, honing, gember, knoflook en kip.</p>
<p>De bakken met noedels werden streng op de juiste volgorde gehouden zodat er geen verwisselingen konden optreden. Sommige noedels bleken ei als ingredient te hebben, sommige niet. Sommige noedels waren erg dun, en dat vond de ene tester juist lekker en de andere tester juist niet. Andere noedels vielen uit elkaar bij de roerbak. Er begonnen zich voorkeuren af te tekenen: &#8220;Wel iets te plakkerig en melig&#8221;, &#8220;beetje ielig maar wel lekkere kleine noedeltjes&#8221;, &#8220;neemt smaak goed op&#8221;, &#8220;ruiken muf&#8221;, &#8220;minder lekker dan 3&#8243;, &#8220;structuur heel goed voor soep&#8221;.</p>
<p>Na anderhalf uur stevig dooreten (24 porties noedels, <em>no carbs no glory</em>!) bleek dat sommige noedels juist goed zijn voor soep, sommige om te worden gebakken. En toen moesten de punten worden geteld.</p>

<p>Als we beide categorieen samen nemen is de algemene winnaar <strong><a href="http://www.flickr.com/photos/kattebelletje/5966277261/" target="_blank">Golden Lion</a></strong> en nummer 2 is noedel <strong><a href="http://www.flickr.com/photos/kattebelletje/5966890016/" target="_blank">Cap Atoom Bulan</a></strong>. Een gedeelde derde plaats is voor noedel <strong><a href="http://www.flickr.com/photos/kattebelletje/5966620667/" target="_blank">Sau Tao</a></strong> en <strong><a href="http://www.flickr.com/photos/kattebelletje/5966276943/" target="_blank">Shin Hua</a></strong>. </p>
<p>Bij de onthulling welke noedels bij welk nummer hoorden, was iedereen enorm verrast. De winnende noedels bleken namelijk helemaal niet duur te zijn, en hadden niet de aantrekkelijkste verpakking. De andere noedels zagen er qua verpakking veel sjieker uit; als we in de winkel hadden gelopen hadden we de winnaars niet snel gekocht.<br />
Zowel <a href="http://www.flickr.com/photos/kattebelletje/5966277261/" target="_blank">Golden Lion</a> als <a href="http://www.flickr.com/photos/kattebelletje/5966890016/" target="_blank">Cap Atoom Bulan</a> zijn &#8216;makkelijke&#8217; noedels, noedels waar het niet snel mis mee gaat. Als je ze iets langer of korter kookt blijven structuur en smaak goed behouden. Cap Atoom Bulan was de favoriet in de soep omdat deze noedels goed smaken opnemen terwijl ze toch hun beet behouden en aangenaam in de mond voelen. Golden Lion werd bij het bakken niet plakkerig, nam prachtig smaken op en had ook een goede beet. Ook in de soep bleef Golden Lion het goed doen en daarom is het overall winner nummer 1! </p>
<p>Omdat we acht soorten uittestten en de noedels niet allemaal even grondig werden afgespoeld of lang bleven liggen na de bereiding &#8211; we konden ze niet allemaal tegelijk direct opeten &#8211; kwamen sommige noedels minder goed uit de bus dan ze thuis zouden doen. Het was moeilijk een echt niet-lekkere noedel aan te wijzen, ze kwamen dicht bij elkaar. Eigen voorkeuren spelen ook een rol. Het testpanel hield niet van te dunne noedels in de soep. Maar Thaise restaurants schijnen te zweren bij bij Long Life Noodles (de dunne gele noedels van <a href="http://www.flickr.com/photos/kattebelletje/5966320581/" target="_blank">Cock Brand</a>), terwijl Chinese restaurants kiezen voor de noedels van <a href="http://www.flickr.com/photos/kattebelletje/5966620667/" target="_blank">Shin Hua</a> als ze gebakken noedels gaan maken.</p>
<p>Al met al een bijzonder geslaagde testavond, we willen de deelnemers heel hartelijk bedanken voor hun medewerking. En chef Miya voor haar inzet. We vonden het heel leuk en nuttig, en zien jullie graag een volgende keer terug!<br />

<p>Who? 6 Panel members: Alice de Jong (of <a href="http://www.tokowijzer.nl">Tokowijzer.nl</a>), 2 culinary experts and 3 customers.</p>
<p>What? Test and give your opinions about the products from Dun Yong. Results will be posted on Dun Yong (<a href="http://www.dunyong.com/testpanel">http://www.dunyong.com/testpanel</a>) and <a href="http://www.tokowijzer.nl">Tokowijzer.nl</a></p>
<p>When? Every last Wednesday of the Month.</p>

			<content:encoded><![CDATA[<p>JOIN US AS WE CELEBRATE OUR 1st ANNIVERSARY ON SUNDAY 20 FEB 2011!</p>
<p>It has been a year since we opened our cooking studio and what a wonderful year it has been – cooking and sharing our cuisine and culture with you. Our “mission” to get you acquainted with the delightful, and for some, unfamiliar cuisines of Asia continues. Since December last year, we started conducting workshop on Friday evenings. In the coming months, we will be introducing more cuisines as well as &#8220;Guest Chef&#8217;s Workshops&#8221; where we invite native chefs to teach their own cuisines.</p>
<p>But first, let us celebrate our 1st anniversary on Sunday, February 20 from 14.00 to 17.00, where you are invited for a drink and of course delectable Asian bites. And because it is our birthday, everyone who registers for a workshop during our celebration receives a FREE mortar and pestle!</p>
<p>To celebrate this special occasion with us, we have invited KoreanTacoParty, two food-loving guys that introduced Korean Tacos in the Netherlands. Inspired by the Kogi food truck rage of LA, KoreanTacoParty created their very own Korean Tacos in Amsterdam.  Are you curious about this exciting combination of flavours? Come and try a Korean Short-rib Taco or a Kimchi Quesadilla on Sunday, 20th February!</p>
<p>Last, but definitely not least, we have also invited Unobento to join us on Sunday to showcase some of her creations. Unobento is none other than Uno Fujisawa, a food designer based in Amsterdam. Unobento offers a *bento-lunch service (*Japanese lunch box) and various workshops on Japanese cuisine. Uno-san will be sharing some of her homemade sushi with you as well as demonstrate another popular Japanese snack, the TAKOYAKI (Japanese savoury poffertjes)! So mark this day on your calendar and Unobento will make you Uki-Uki!</p>
